Two Minute Chicken Fajitas

Here’s a very quick and easy lunch idea. I had quite a few grilled fajita veggies left from the Flank Steak Fajitas that I made last night. Plus I’d cooked up an Easy Peasy Slow Cooker Roast Chicken a couple days ago. Put them together and garnish with some avocado and salsa and you have a super fast, delicious Chicken Fajita lunch.  

Prep time: 2 minutes

Cooking time: All the cooking has been done already

Serves: 1



  • Fajita vegetables from Flank Steak Fajitas

  • Chicken from Easy Peasy Slow Cooker Roast Chicken

  • Avocado slices

  • Salsa



  • Top vegetables with some of the chicken, garnish with avocado and salsa. Done!
