Thai Style Green Beans

I’m not actually a huge fan of green beans. Maybe it’s because of all those overcooked canned green beans that I was forced to eat as a kid (sorry, Mom). But some of the green beans that I’ve had at Thai restaurants have been really good. So the last time I made Thai Style Pork Ribs, I searched for a good Thai green bean recipe and found one but it had soy sauce, canola oil and peanut butter in the recipe. This is the Paleoized version and these beans are really, really good!

Prep time: 5 minutes

Cooking time: 8 minutes

Serves: 4 - 6


  • 1 T coconut aminos

  • 1 T hoisin sauce

  • ⅛ t crushed red pepper flakes

  • 1 T creamy almond butter

  • 1 pound of green beans

  • 1 - 2 T coconut oil

  • 1 t freshly grated ginger, or ginger paste

  • 1 shallot or small onion

  • Himalayan salt or sea salt to taste

  • Freshly ground black pepper to taste


  • In a small bowl, combine the coconut aminos, hoisin sauce, almond butter and red pepper flakes and stir or whisk well until smooth

  • Grate the fresh ginger and mince the onion

  • Heat a large skillet on medium heat and add the coconut oil.

  • Add the grated ginger and minced onion and saute for 2-3 minutes until fragrant

  • Add the green beans and stir frequently until the beans are bright green and still a bit crispy, about 5 minutes

  • Add salt and pepper to taste

  • Remove from the skillet, top with the hoisin sauce mixture and serve
