Thai Sauteed Veggies

The perfect companion to Thai Style Pork Ribs. Super easy to make and tasty!

Prep time: 5 - 7 minutes

Cooking time: 6 minutes

Serves: 4

 

Ingredients

  • 1 red bell pepper

  • 6 ounces shiitake mushrooms

  • 3 green onions

  • 1 bunch of bok choy greens

  • 2 t ginger paste

  • 1 large clove garlic, pressed

  • 1 T sesame oil

  • Optional (and recommended) ⅛ t red chili pepper flakes

 

Instructions

  • Clean and slice the red pepper into thin slices

  • Stem and slice the mushrooms into thin slices

  • Slice the green onions into slices about ¼ inch thick, on the diagonal

  • Thinly slice the greens of the bok choy

  • Heat a cast iron skillet on medium high heat and add the sesame oil. Add the pressed garlic and ginger paste and cook for about 30 seconds

  • Add the red bell pepper slices and mushroom slices and cook for about 3 minutes

  • Add the green onions and bok choy and cook until just wilted, about 2 minutes

  • Season with salt and pepper and optional red chili pepper flakes and serve
