Spicy Sweet Potato Bites

WARNING! These are kind of addictive. If you’re not careful, you’ll end up eating 2 or 3 sweet potatoes worth of these delicious bites in one sitting. The spices combined with the natural sweetness of the potatoes make an amazing combination. You can also make fries with this recipe by, well, cutting the potatoes into fries. But I’ve found doing the smaller bite sized pieces is quicker and easier. They’re great with the Caramelized Onion Bacon Burgers and they go well with lots of other veggie dishes as well. Just remember my warning.

 

This is a large batch so you’ll have lots of leftovers if you don’t eat them all up at once.

Prep time: 10 minutes

Cooking time: 40 minutes

Serves: 6+

 

Ingredients

  • 4 - 6 medium to large sweet potatoes

  • ⅓ to ½ cup melted coconut oil

  • 1 T paprika

  • 1 heaping Tablespoon of Ceylon cinnamon

  • ½ t cayenne pepper

  • 1 t Himalayan salt or sea salt

  • ½ t ground pepper

Instructions

  • Heat the oven to 400 degrees

  • Start melting the coconut oil. I do it on the stove on the lowest heat setting possible.

  • Peel the sweet potatoes and cut them into chunks about ¾ inch x ¾ inch and place them in a large bowl.

  • When the coconut oil is melted, add the paprika, cinnamon, cayenne pepper, salt and pepper and mix well.

  • Add the coconut oil mixture to the bowl of sweet potato chunks and stir well to coat all the pieces.

  • Put the sweet potatoes on a cookie sheet - I prefer using sheets that have lips so that the coconut oil doesn’t drip off the edges. I use two 11x17 sheets for this recipe.

  • Place the sweet potatoes in the oven and roast for 20 minutes

  • After 20 minutes, remove them from the oven and stir well

  • Put them back in the oven and roast for another 20 minutes.

  • Sometimes I keep them in a bit longer so that they get a little crispy around the edges.

  • Serve and try not to eat them all up at once.
