Snacks

Yes these are the same muffins as you see on the Breakfast page. They make great snacks any time. These muffins are delicious, very easy to make and easily modified. If you want low carb versions, you can leave the apples and/or  raisins out of them, and use less honey, or use stevia as the sweetener. Don’t want nuts? No problem. Leave them out.

 

I always make large batches and freeze half.

This is a variation on the Paleo Apple Muffin recipe. There are just a few changes in ingredients and they taste very different. As with the Apple Muffins, you can adjust the ingredients to make them lower carb if that’s what you’re after. Cut the craisins (dried cranberries) in half, reduce the amount of honey and/or use stevia as the sweetener.

I’ll tell you right up front, a lot of people that follow the Paleo diet believe that any sweet treats are 100% non-Paleo. And some will also say that any baked goods are non-Paleo. But I think that every once in awhile, especially if you’ve done a hard workout, long run or long bike ride, and you’re not diabetic or pre-diabetic, or if you’re not eating super-low carb (I know, lots of caveats) then a sweet treat is fine. And these sweet potato brownies are awesome. Just be careful because before you know it, you’ll eat them all.
