Slow Cooker BBQ Beef

One of the things I love about using the slow cooker is that when you cook beef in it, it comes out juicy and tender. Like most slow cooker recipes, this recipe requires little prep time. And the BBQ Beef that comes out of it is very flavorful and tender.


But you can’t rush it! I got mine going a little late in the day and at dinner time, it had only been in the cooker for a little over 6 hours. I was disappointed. It wasn’t tender. It tasted good, but wasn’t what I’d expected. But 3 hours later? Perfection! Make sure you get it going early in the day so it has a full 8-9 hours to cook.

Prep time: 10 minutes

Cooking time: 9 hours

Serves: Lots! I used a little over 4 pounds of chuck roast and that makes at least 10 servings



  • 4-5 pounds grass fed beef chuck roast



  • 1 large white, yellow or sweet onion, diced

  • 1 15 oz can organic tomato sauce

  • 1 6 oz can organic tomato paste

  • 3 T organic honey

  • 2 T organic apple cider vinegar

  • 2 t Himalayan salt or sea salt

  • 3 large garlic cloves pressed or minced

  • 2 t paprika

  • 1 T coconut aminos

  • 1 t liquid smoke

  • 1 t dried oregano

  • ½ t cayenne pepper

  • ½ t chili pepper flakes

  • Freshly ground pepper to taste (I used about ½ T)

  • Note that I like my BBQ beef spicy, so if you want a milder flavor, cut the cayenne pepper, chili pepper flakes and ground pepper in half



  • Combine all of the sauce ingredients in a medium sized bowl and blend well

  • Pour about half of the sauce into the slow cooker and spread evenly

  • Place the chuck roast in the slow cooker

  • Pour the remaining sauce on top of the chuck roast

  • Cook on low for 8-9 hours (9 is better)

  • You should be able to shred the beef in the pot easily using forks
