Some people don’t eat breakfast. I can’t even imagine that. I’m with the hobbits on this one… I have first breakfast, second breakfast and sometimes third breakfast.
But sometimes it’s hard to do everything you need to do in the morning and also eat a good breakfast. The solution? Make a bunch of breakfasts that you can take with you and eat anywhere. Make some Egg Muffins. No… not Egg McMuffins. Those are pretty gross. I’m talking Egg Muffins. Mix up some eggs and anything you like: chopped veggies, bacon or ham, maybe some salsa, and then pour the mixture into a muffin pan and bake them. Put some in the freezer so you have a bunch of easy to grab breakfasts whenever you need them.
Of course you don’t have to make 36 of them at once. But why not? It’s pretty much the same amount of work whether you’re making 6 or 36 at once. And I usually eat at least two at a time so they don’t really last that long.
