Scrambled Eggs and Veggies

If you’ve been having toast or bagels or cereal and milk for breakfast, you’re going to need a few ideas for fast, easy to make real food breakfasts. Here’s the first one: Take some of the Sauteed Veggies that you’ve made ahead of time and scramble them up with some fresh pasture raised eggs. Add salsa and avocado slices. Done!


Prep time: 2 minutes

Cooking time: 5 minutes

Serves: 1


  • About ⅓ cup Sauteed Veggies (Or more… however much you want)

  • 2 pasture raised chicken eggs

  • Freshly ground pepper to taste

  • ¼  to ½ sliced avocado

  • 1-2 T fresh salsa



  • Warm a large skillet on low heat

  • Add sauteed veggies

  • Add eggs and stir until blended with the veggies. Stir frequently. Keep the heat low and don’t be in a hurry… you don’t want to overcook the eggs. Keep cooking and stirring until the eggs have set.

  • Add pepper to taste

  • Garnish with avocado and salsa
