Sauteed Veggies

One thing that you can do to make creating delicious meals throughout the week very easy is to saute a bunch of veggies and keep them in the fridge so they’re ready ahead of time. I typically saute a bunch of onions and zucchini once or twice a week and use them in my scrambled eggs in the morning or for lunch with some Slow Cooker Roast Chicken. They’re really easy to make. You can pick your favorite vegetables and have a big batch that’s good for several meals in just a few minutes.

Prep time: 5-10 minutes

Cooking time: 20 minutes

Makes 4-6 servings

 

Ingredients

  • Two large onions of your choice, chopped (sweet, yellow, red, whatever you prefer)

  • 3 medium zucchini, sliced or chopped

  • Whatever other veggies you like… broccoli, peppers, etc., chopped

  • 2 T organic coconut oil or bacon fat from pasture raised pork

  • Himalayan salt or sea salt and freshly ground pepper to taste

 

Instructions

  • Place large skillet on the stove on medium/low heat

  • Add coconut oil or fat

  • Add chopped vegetables

  • Stir frequently (every 3 or 4 minutes)

  • Cook until done. This is personal preference. If you like them a little bit crispy, they’ll probably be done in 10-15 min. If you like them softer, 15-20 min
