Pizza Frittata

When I talk about eliminating bread when eating Paleo, a lot of people say “What? I can’t have pizza?!”  I understand. People love pizza. People have pizza for dinner, lunch and sometimes for breakfast. This pizza frittata just might satisfy that pizza craving. It smells like pizza, tastes like pizza and has everything that a pizza has except for the crust. And just like pizza, you can have it for breakfast, lunch or dinner!  


 

Prep time: 15 minutes

Cooking time: 30 minutes

Serves: 4 - 6

 

Ingredients

  • 1 pound of Italian sausage

  • 12 pasture raised eggs

  • 1 cup low sugar pizza sauce

  • 1/4 cup fresh basil, shredded or chopped

  • Pinch of salt

  • Freshly ground pepper to taste

  • 1/4 - 1/2 t red pepper flakes

  • 1 green, red or yellow pepper, sliced

  • 6 mushrooms, sliced

  • Uncured pepperoni slices

  • And of course you can add any other favorite pizza toppings

 

Instructions

  • Warm oven to 350 degrees

  • Place a large skillet on the stove over medium heat.

  • Add italian sausage, break into small pieces and cook until browned throughout.

  • In a large bowl, mix eggs, pizza sauce, basil, salt, pepper and red pepper flakes

  • Spread the sausage evenly in the pan and turn the heat down to medium low

  • Pour egg mixture into the pan and cook for about 5 minutes

  • On top of the egg mixture add pepper slices, mushroom slices and pepperoni slices

  • Bake in the oven for 20 minutes or until set.
