Pistachio Crusted Wild Salmon

This salmon recipe tastes quite different from the Orange Citrus Glazed Salmon recipe but it’s just as easy. The dijon mustard and honey give it a sweet tangy flavor and the pistachio nuts give it a delicious texture that you’ll love.

The fillets that I used for this recipe were frozen Wild Sockeye Salmon from Trader Joe’s.

Prep time: 5 minutes

Cooking time: 6-9 minutes

Serves: 4

  • 4 6-8oz wild salmon filets

  • Juice from 1 lemon

  • 2 T dijon mustard (coarse ground mustard works also)

  • 2 T organic honey

  • ½ cup shelled pistachio nuts, chopped

  • 1 t extra virgin olive oil

  • Heat oven to 350 degrees or warm a gas grill to approximately 350 degrees.

  • Coarsely chop the pistachio nuts with a small food processor or a sharp knife. You want chunks, not a powder.

  • In a small bowl, mix lemon juice, mustard, honey, chopped pistachio nuts and olive oil.

  • Spread the mixture on top of each salmon filet

  • Bake or grill the salmon until it flakes with a fork. Note that thinner fillets will cook very quickly. Start checking for doneness after about 5 minutes.
