Easy Peasy Slow Cooker

Roast Chicken

If you’ve never used a slow cooker to roast a chicken, after doing it this way, you’ll wonder why you didn’t always use the slow cooker. The prep time is less than 5 minutes! Really. I’m going to post a video with no editing to prove it.


This is a great way to have chicken for 2 or 3 meals during the week. Put in in the slow cooker before you leave for work in the morning and when you get home, just add a veggie side dish and a salad. Dinner’s ready!

Prep time: 5 minutes

Cooking time: 8 hours

Serves: A 4-5 lb chicken is good for at least a couple of meals for 4 people.


  • 1 whole pasture raised chicken 4 to 5 lb

  • 1 t thyme

  • 1 t paprika

  • 1 t ground black pepper

  • 1 t Himalayan salt or sea salt

  • ½ t cayenne pepper

  • 1 - 2 T extra virgin olive oil


  • Place a slow cooker roasting rack, small shallow pyrex dish, or 4-5 aluminum foil balls in the bottom of the slow cooker. You want the chicken up off the bottom of the slow cooker so that it stays above the juices.

  • Combine all the spices in a small bowl

  • Pat the chicken dry with a paper towel and rub with the olive oil.

  • Coat the entire chicken with the spices

  • Place the chicken in the slow cooker and cook on low for 7-8 hours.

  • Remove the chicken from the cooker and let cool, then remove the meat from the bones.
