Caramelized Onion Bacon Burgers

These Caramelized Onion Bacon Burgers are some of the best burgers I’ve ever had. Most of my recipes are fast and easy. But sometimes it's worth spending some extra time to make delicious food. I always make a big batch so that I have a lot of leftovers. They’re absolutely the best when they’re fresh off the grill, but they’re still excellent when reheated.  I make them all the time and just have them around for breakfast, lunch or dinner. They’re so good that sometimes I’ll eat them cold.


One thing to note: Caramelizing the onions takes some time... about an hour or more so plan ahead! Often I’ll caramelize the onions a day or two before while I’m doing something else.

Also, while cooking the onions, keep the heat very low and stir the onions every 5-7 minutes. Sometimes I set a timer so that I don’t forget to stir them, then keep resetting the timer until they’re done. You don’t want to burn your onions. That’s a major fail and you have to start over.

Other than the onion part, the burgers are really easy to make and delicious!


Serving suggestion: Top with sliced avocado and salsa




  • 2 lb grass fed, grass finished ground beef

  • 2 large sweet onions, sliced

  • 6-8 strips of your favorite pasture raised pork bacon, thick sliced

  • 1 tsp freshly ground black pepper

  • ½ tsp Himalayan salt or sea salt

  • ¼ - ½ tsp ground cayenne pepper (to taste)

  • Optional: 1 or 2 diced jalapeno peppers, minced (instead of cayenne pepper)




  • Warm a large cast iron skillet on low heat

  • Cook bacon until done, but not quite crispy

  • Remove bacon from skillet and leave the bacon fat

  • Place sliced onions in skillet with bacon fat. Burner should be set on very low heat.

  • Saute the onions for approximately one hour, stirring every 5-7 minutes. Cook until the onions are golden brown. You may need to add extra bacon fat as the onions cook down.

  • Chop the bacon into chunks of the size that you prefer

  • Chop the caramelized onion into the size you prefer

  • Warm a gas grill up to 325-350 degrees. You can also cook these in the cast iron skillet on medium heat.

  • Place the ground beef, chopped caramelized onions, chopped bacon, pepper, salt and cayenne pepper into a large bowl and mix thoroughly with your hands

  • Turn the ground beef mixture out onto a cutting board and roll into a log shape about 3 inches in diameter

  • Cut the ground beef log in half, then cut each of those halves into 4 slices

  • Pat the slices into patties of the desired size

  • Place the patties on the grill or in the skillet. Cook for approximately 3-5 minutes per side.
