Breakfast Recipes and Ideas

Sometimes nothing beats a nice, warm muffin. Julie and I have these as part of our breakfast every day. And we often eat them for snacks as well. These muffins are delicious, very easy to make and easily modified. If you want low carb versions, you can leave the apples and/or  raisins out of them, and use less honey, or use stevia as th22e sweetener. Don’t want nuts? No problem. Leave them out.


I always make large batches and freeze half.

Scrambled Eggs and Veggies

If you’ve been having toast or bagels or cereal and milk for breakfast, you’re going to need a few ideas for fast, easy to make real food breakfasts. Here’s the first one: Take some of the Sauteed Veggies that you’ve made ahead of time and scramble them up with some fresh pasture raised eggs. Add salsa and avocado slices. Done!

Cooking time: 5 minutes

This is a variation on the Paleo Apple Muffin recipe. There are just a few changes in ingredients and they taste very different. As with the Apple Muffins, you can adjust the ingredients to make them lower carb if that’s what you’re after. Cut the craisins (dried cranberries) in half, reduce the amount of honey and/or use stevia as the sweetener.

More than 20 years ago, on a trip to Mexico, we found a little streetside cafe that was selling fresh yogurt and fruit. Every morning we went there and had it for breakfast. Every time I eat homemade yogurt with fruit it reminds me of that trip. And because I have yogurt as part of my breakfast almost every day, I think about that Mexico trip a lot. It’s amazing how foods and flavors trigger memories.


Strictly speaking, yogurt is not a Paleo food. Dairy products are a fairly recent addition to the human diet, which is why so many people are lactose intolerant… many people simply don’t have the digestive enzymes necessary to digest the sugars in milk. That said, yogurt is a fermented food, and fermented foods are very Paleo. And fermented foods are important to keeping our guts healthy.
