Blackened Wild Cod

It’s time for another delicious 15 minute dish! The great thing about fish is that you can prepare it and cook it so quickly. But some fish, like cod, can be a bit bland. Not this cod! It’s very easy and very delicious and you probably have all of the spices that you need in your cupboard. I found this fish (frozen) at Trader Joe’s

Prep time: 5 minutes

Cooking time: 7 minutes

Serves: 4

  • 4 wild cod filets

  • 2 T butter

  • 1 T paprika

  • 2 t thyme

  • 1 t oregano

  • 1 t garlic powder

  • 1 t onion powder

  • 1 t Himalayan salt or sea salt

  • ½ t cayenne pepper

  • Warm a gas grill to approximately 350 degrees. You can also pan fry the fish in a large skillet warmed up on medium heat. You can use the same skillet you use to melt the butter in the step below.

  • In a shallow dish, add all the spices and mix well

  • In a skillet, melt the butter on low heat

  • When the butter is melted, place a filet in the pan and flip it to coat both sides with butter

  • Transfer it to the shallow dish with the mixed spices and coat both sides well

  • Repeat the last two steps with all pieces of cod

  • Place the cod on the grill (or in the skillet) for about 3 minutes and flip. Cook the other side for about 2 minutes and check for doneness. The fish is done when it flakes through. Don’t overcook it!
